LINDORES ABBEY DISTILLERY

Nestled in the heart of Newburgh, Fife, Lindores Abbey Distillery stands as a testament to the rich and storied history of Scotch whisky. This remarkable site, founded in 1191 by David Earl of Huntingdon, is not only a beautiful slice of Scottish heritage but also the birthplace of Scotch whisky, with the first recorded mention of whisky distillation documented in the Exchequer Rolls of 1494.


A Historical Gem


Lindores Abbey is steeped in history. It’s where William Wallace sought refuge after the Battle of Black Earnside in 1298 and the burial site of the first Duke of Rothesay. The abbey’s ruins, with their ancient stone structures and tranquil surroundings, offer a glimpse into a bygone era.

During my visit, I was fortunate to embark on a private tour led by Lorena, whose passion for the craft and knowledge of the distillery’s history made the experience truly special. Her enthusiasm was infectious, and it was clear that everyone at Lindores takes immense pride in preserving the site’s legacy while pushing the boundaries of whisky production.



Respecting the Past, Innovating for the Future


Lindores Abbey Distillery beautifully marries the old with the new. The distillery itself is constructed using original abbey stones, creating a seamless blend of traditional and modern aesthetics. Recent archaeological digs at the site have unearthed what might be one of the oldest whisky stills ever discovered, adding another layer to its rich historical tapestry.


The distillery offers a variety of unique experiences for visitors. From the Apothecary Experience, where you can craft your own Aqua Vitae using herbs and spices from the abbey gardens, to whisky flights and self-guided tastings, there’s something for every whisky enthusiast. The whisky museum on-site is also a must-visit, showcasing the history and evolution of whisky-making at Lindores.

What truly sets Lindores Abbey Distillery apart is the dedication and passion of its team. Lorena’s tour was a highlight, but it was also clear that every member of the team was deeply committed to their craft. They painstakingly hone their skills to create the best new make spirit, which in turn determines the exceptional quality and flavour of their finished whiskies.



A Tasting Experience


I had the pleasure of tasting several expressions during my visit, each offering a unique glimpse into the distillery’s artistry:

1949:

  • Nose: Honey, heather, biscuits, and baked apple pie with cinnamon on top.

  • Taste: Oily with notes of vanilla, burnt sugar, charred oak, butterscotch, and a light citrus finish.

Sherry Butt:

  • Nose: Rich sweet wine, spices, dates, and pudding.

  • Taste: Dark fruits upfront, dates, sultanas, followed by white pepper, vanilla wafers, and an oaky aftertaste.

Distillery Cask:

  • Nose: Light and delicate with gooseberry, vanilla, and more floral notes with water, featuring white flowers and orchard fruits.

  • Taste: Sweet and ripe fruits, a good balance of sweetness and citrus, spicy with a bit of an oily and oaky profile. With water, it becomes even more fruity, highlighting ripe apples, pears, and a buttery finish.
