Headlands Distilling Co., based in Wollongong on the NSW south coast. The distillery was founded in 2015 by four friends studying at the University of Wollongong who shared a passion for engineering and sustainability. The Grain to Glass philosophy is core to Headlands’ products, every step of the production process is done from scratch, from milling the grain, mashing, fermentation, distilling, filtering, bottling and labeling. It demonstrates our passion for ensuring purity at every stage of production.


The whisky in this release was distilled and barrelled in the coastal town of Wollongong in 2016. It has been finished in oak casks that were seasoned with 15 year old Seppeltsfield Rare Muscat – an exclusive Australian fortified wine made from grapes in the Muscat Rouge à Petits Grains variety grown in the heartland of the Victorian wine region at Rutherglen. This batch won the silver medal at the 2021 London Spirits Competition.



Nose:  Delicate, nice balance of sweet and citrus notes, pineapple, passion fruit, vanilla, morning forest fresh air.

Palate:  Delicate, sweet, vanilla biscuit, stone fruits - apricot, peach, mild spice mid palate.

Finish:  smooth, short to medium finish with spiced oak lingering.
